New England Turkey Bake

1/4 cup margarine

1/4 cup flour

11/4 cups milk

1/2 tsp. salt

1/4 tsp. pepper

1 cup sharp cheddar cheese

2 cups diced, cooked turkey

1 10-ounce package frozen peas, cooked

2 cups hot mashed potatoes

Make white sauce with margarine, flour, milk, and seasonings. Add 11/2 cups cheese, stirring until melted. Add turkey and peas. Pour into casserole and top with mashed potatoes. Bake at 350 degrees for 25 minutes. Sprinkle with remaining cheese; return to oven until cheese melts.

  

Warm Turkey and Spinach Salad with Crispy Bacon

and Cranberry Vinaigrette

Salad:

4 cups chopped leftover cooked turkey

6 cups prewashed spinach

2 cups torn Boston lettuce

Vinaigrette:

2 ounces bacon

1/2 cup minced shallots

1 garlic clove, minced

1/2 cup whole-berry cranberry sauce or leftover cranberry relish

2 tablespoons champagne vinegar

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

To prepare salad, combine turkey, spinach, and lettuce in a large bowl. To prepare vinaigrette, cook the bacon in a skillet over medium-high heat until crisp. Remove bacon from pan, chop and set aside. Reserve 1 tablespoon of drippings in pan. Add shallots and garlic to pan, and sauté for 1 minute or until tender. Stir in the cranberry sauce, vinegar, olive oil, salt, and pepper. Cook over medium-low heat 2 minutes or until warm. Pour vinaigrette over the salad; toss. Top with bacon, serve immediately.

 

The Ever-Popular Green Bean Casserole with Almonds

16-ounce bag frozen green beans

1 can Campbell's Healthy Request Cream of Mushroom Soup

1/2 cup 1% milk

1/4 cup fat-free sour cream

1/4 teaspoon pepper

3 tablespoons slivered almonds

nonstick cooking spray

11/2 tablespoons Parmesan cheese

Thaw green beans until softened. Combine soup, milk, sour cream, pepper, and 2 tablespoons of almonds in a large bowl. Add thawed, drained beans and toss together. Place mixture into a casserole dish sprayed with nonstick cooking spray. Sprinkle almonds and cheese on top. Bake at 350 degrees for 30 minutes, then broil for a few minutes to brown the top.
